In healthcare settings, a nutritious diet is essential for patient treatment and recovery. Food must be safe, of good quality, wholesome, and served at times that are convenient and appropriate. Food hygiene requires attention to detail in relation to all preventive measures to minimize the hazards of food poisoning, particularly given the presence of immunocompromised patients. ISO 22000, as being recognized as the most efficient way of food safety system and its implementation in healthcare institutions could assure meal safety and create a generally positive attitude toward correct handling of food, safe storage practices, and cross-contamination control among food-services staff in hospitals. By the end of the workshop the participants will be able to: • Recognize the requirements of ISO 22000:2005 within the context of healthcare institutions • Develop a food safety management system in healthcare institutions • Identify the critical control processes that need to be managed to produce safe food • Evaluate the effectiveness and capability of control measures to ensure control of the identified food safety hazard(s) within healthcare institutions • Demonstrate the deeper insight of ISO 22000 as a tool for the enhancement for continual improvement and update of the food safety system within healthcare institutions.
